Country Potatoes
These tempting potatoes are easy to make, great with grilled meats or a salad for a light lunch. Variation: Instead of breadcrumbs, use ready-made plain croutons, finely crushed. Seal the croutons in a plastic bag, then crush with a rolling pin. Use other herbs in the margarine mixture, such as tarragon, oregano or thyme
Ingredients
4 large baking potatoes, peeled
4 teaspoons mono- or polyunsaturated margarine, melted
1 teaspoon olive oil
1 tablespoon shredded basil or 1 teaspoon dried basil
1/4 cup fresh breadcrumbs
1/4 cup grated Parmesan cheese
Preparation
Preheat oven to 200°C
Spray a baking tray with vegetable cooking spray
Set aside
Cut each potato in half lengthwise
Cut each half diagonally into 5-mm-thick slices, keeping slices together
Using an egg slice, place each potato half on prepared baking tray
Press with fingers to fan slices
In a small bowl, combine the margarine, oil and basil
Mix well
Brush evenly over potatoes
Bake for 30 minutes
In a second small bowl, combine breadcrumbs, Parmesan cheese and 1 and 1/2 teaspoons water
Mix well
Sprinkle evenly over potatoes
Bake until browned and tender, about 10 to 15 minutes
Serve immediately
