How to Cook Rice
1/4 cup uncooked rice will give 1 cup cooked rice. Long grain rice is usually used for savoury dishes. Short grain rice is used to make puddings.
Method
To Cook White Rice
Wash long grain rice if desired
Add rice to a large quantity boiling, salted water
Cook uncovered until rice is tender, approximately 10-15 minutes
Do not add salt to jasmine rice as this spoils the flavour
When cooked, rinse rice under hot water
Drain well
To Cook Brown Rice
Cook in boiling, salted water for about 40 minutes or until tender
To Dry Rice for Frying
Spread rice out on a tea towel on an oven tray, tray or roasting dish.
Leave uncovered to dry overnight.
Rice can also be Cooked by
Oven cooking - Place rice in a casserole dish. Add 2 cups of boiling water and 1/2 teaspoon salt for each cup of rice. Cover and cook at 180°C for 35-40 minutes.
Pan steaming - Add 1 cup rice and 1/2 teaspoon salt to 2 cups water in a saucepan. Bring to the boil, cover tightly and cook over a low heat for 15-20 minutes.
