Coffee Cake

Edmonds recipe coffee cake

Ingredients

1 teaspoon instant coffee

1 tablespoon boiling water

75 g butter, softened

3/4 cup sugar

1/2 teaspoon vanilla essence

3 eggs separated

1 cup Edmonds plain baking flour

3 tablespoons Edmonds Fielder's cornflour

1 teaspoon Edmonds baking powder

3 tablespoons milk

Coffee Icing

Preparation

Dissolve coffee in the boiling water

Cream butter, sugar, coffee mixture and vanilla until light and fluffy

Add egg yolks one at a time, beating well after each addition.

In a separate bowl beat the egg whites until soft peaks form

Sift flour, cornflour and baking powder together

Add sifted ingredients to creamed mixture alternately with the egg whites

Stir in milk

Pour cake mixture into two greased and lined 20 cm sponge sandwich tins

Bake at 190°C for 20-25 minutes or until cake springs back when lightly touched

Leave in tin for 10 minutes before turning out onto a cooling rack

Fill and ice with Coffee Icing

Decorate with walnut pieces if desired.
