Cinnamon Coffee Cake
Serve warm or cold with orange slices and strawberries
Ingredients
3 & 1/2 cups self-raising flour
75 g unsalted butter, diced
1 egg, lightly beaten
1 & 1/2 cups skim milk or buttermilk
4 extra teaspoons skim milk or buttermilk to glaze
Orange slices and strawberries for serving
For the Icing and Filling
4 teaspoons butter, melted
1/2 cup white sugar
3 teaspoons ground cinnamon
1 cup sultanas
1/2 cup icing sugar for icing
Preparation

Preheat oven to 200°C
Spray a 23-cm round cake tin with vegetable oil cooking spray

Sift flour in a mixing bowl
Add butter and rub in with the fingertips
Mix in egg and milk with a fork to make a soft dough

On a floured surface, roll dough into a 42 x 45-cm rectangle
Brush with melted butter
Sprinkle with sugar, cinnamon and sultanas

Starting with a long edge, roll up dough Swiss roll style
Pinch seam to seal
Cut into eighteen 2.5-cm slices
Place slices, overlapping slightly, around edge of tin to form a ring
Brush with extra milk.

Bake for 20 to 25 minutes until golden and firm
Transfer to a wire rack; cool for 10 minutes

In a bowl, blend icing sugar with enough cold water to coat a wooden spoon
Drizzle over cake
