Chocolate Self Saucing Pudding

From the Edmonds cooking book a self saucing pudding

Ingredients

100 g butter, softened

3/4 cup sugar

1 egg

1 teaspoon vanilla essence

1 1/4 cups Edmonds plain baking flour

2 teaspoons Edmonds baking powder

1 tablespoon cocoa

2 cups boiling water

Sauce

1/2 cup brown sugar

1 tablespoon Edmonds Fielder's cornflour

1/4 cup cocoa

Preparation

Beat butter, sugar, egg and vanilla together.

Sift flour, baking powder and cocoa together

Fold into beaten mixture.

Spoon mixture into a greased ovenproof dish.

Sprinkle sauce mixture over.

Carefully pour boiling water over the back of a spoon onto the pudding.

Bake at 180°C for 35 minutes or until pudding springs back when lightly touched.

Sauce

Combine all ingredients.

Serves 6
