Chocolate Pudding
Chocoholics rejoice. There's nothing like this smooth, creamy pudding. Quick to make and good for you
Ingredients
2 egg whites
2/3 cup cocoa
6 teaspoons cornflour
2 1/4 cups skim milk
1/2 cup white sugar
6 teaspoons vanilla flavouring essence
Fresh strawberries, mint leaves and 1/2 teaspoon drinking chocolate for decoration
Preparation

In a mixing bowl, lightly whisk egg whites and set aside
In a second mixing bowl, combine cocoa with cornflour
Using a wooden spoon, blend 3/4 cup of milk gradually into cocoa mixture until completely smooth.

In a heavy-based saucepan, combine remaining milk and sugar
Stir well with a wooden spoon
Bring to the boil, watching constantly
Remove from heat.

Whisk cocoa mixture into hot milk mixture
Return the saucepan to a medium-high heat and bring to the boil stirring constantly
Reduce heat to low and simmer for 2 minutes, stirring constantly
Remove from heat.

Using a plastic spatula or balloon-shaped whisk, gradually fold 1 cup of hot cocoa mixture into the egg whites
Pour mixture back into pan
Return to a medium-low heat and cook for 2 minutes, stirring constantly
Do not boil
Remove from heat.

Add vanilla, stir well
Cool slightly
Pour pudding into serving dishes
Cover and chill for at least 1 hour
Decorate

When cooking pudding, stir constantly with a wooden spoon for a smooth, lump-free texture. A metal spoon will conduct the heat and burn your hand
To prevent a skin from forming on puddings in serving dishes, lay a piece of clear plastic wrap directly on the surface before cooling
