Chinese Lemon Chicken
Deep fried chicken bites with sauce
Ingredients
1/2 cup lemon juice
2 teaspoons grated lemon rind
2 teaspoons chicken stock powder
2 tablespoons Edmonds Fielder's cornflour
3 tablespoons brown sugar
2 teaspoons grated root ginger
1 and 1/2 cups water
4 single boneless chicken breasts
1/4 cup Edmonds Fielder's cornflour
1 egg white
oil for deep-frying
4 spring onions, chopped
Method
Combine lemon juice, rind, stock powder, first measure of cornflour, sugar, ginger and water in a saucepan
Bring to the boil, stirring constantly until mixture boils and thickens
Remove from heat
Cover and keep warm
Remove skin from chicken and cut flesh into bite-sized pieces
Coat in second measure of cornflour
Lightly beat egg white
Dip a few pieces of chicken into egg white
Deep-fry until crisp and golden
Drain and keep warm
Continue doing this until all chicken has been cooked
Arrange chicken on serving plate
Pour hot sauce over chicken
Garnish with spring onions
Serves 4 - 6
