Chilli Corn Fritters with Créme Fraiche and Avocado and Tomato Salsa
Chilli corn fritter is a versatile dish that can be prepared as a brunch, lunch or dinner canapé.
Ingredients
2 x corns on the cob, kernels removed
2 chillies, finely diced
1/2 cup finely sliced green onions (shallots)
1/2 cup coriander leaves, roughly chopped
1 teaspoon ground cumin
1 teaspoon ground sweet paprika
1/2 teaspoon sea salt flakes
1/2 teaspoon cracked black pepper
2 cups self-raising flour
2 eggs, lightly beaten
1 cup milk
1/2 cup cold water
1/4 cup olive oil
200 grm grape tomatoes, quartered
1 avocado, finely diced
1/2 large red onion, finely diced
Zest & juice of 1 lime
2 x 200grm tub of créme fraiche
Extra coriander leaves and ground cumin and paprika to serve.
Method
Place the corn kernels, chillies, green onions, coriander leaves, ground cumin, ground paprika and salt and pepper into a large mixing bowl and stir to combine.
Sift the flour over the corn mixture and stir to coat evenly with the flour.
Add the eggs, milk and half the water and stir gently to combine.
Add more water if needed and gently stir through.
The mixture should be wet and sticky, but not runny.
To make the avocado and tomato salsa, place the grape tomatoes, avocado, red onion and zest and juice of lime into a bowl and toss to combine.
Set aside.
Preheat barbecue plate or frypan to a medium heat.
Pour one tablespoon of oil onto the barbecue plate or frypan and scrape or swirl to cover the cooking area.
Using a tablespoon measurement, spoon heaped spoonfuls of the corn mixture onto the barbecue or frypan and lightly flatten out to a round.
Cook on the one side for 1-2 minutes and then flip and cook on the other side for 1-2 minutes or until cooked through.
Set aside on a plate to cool.
Once cooled, spoon teaspoons of the créme fraiche on to the fritter and then spoon on the salsa.
Top with extra coriander and a sprinkle of ground cumin and paprika.
Makes 24 fritters
Preparation Time 10-15 minutes
Cooking Time 10-15 minutes (+ 20 minutes cooling time)
