Chicken and Orange Casserole

Oven cooked casserole or stove top cooked orange flavoured chicken

Ingredients

1 kg chicken pieces

1 tablespoon butter

1 onion, finely chopped

1 cup sliced celery

1/2 cup orange juice

1/2 cup chicken stock

1/4 teaspoon cinnamon

1/8 teaspoon ground allspice

1 tablespoon grated orange rind

1 tablespoon Edmonds Fielder's cornflour

1 tablespoon DYC white vinegar

Method

Remove skin and fat from chicken.

Melt butter in a large frying pan or flameproof casserole dish.

Add chicken and quickly brown on all sides.

Remove from pan and set aside.

Add onion and celery.

Cook until onion is clear.

Add orange juice, stock, cinnamon, allspice and orange rind.

Bring to the boil.

Add chicken.

Cover and cook at 180°C for 40 minutes or until juices run clear when tested.

Alternatively, to continue cooking on top of stove, reduce heat, cover and simmer gently for 30 minutes.

Mix cornflour and vinegar to a smooth paste.

Add to chicken mixture.

Stir until mixture thickens.

Garnish with orange slices.

Serves 4 - 6
