Chicken & Mushrooms

Chicken and mushrooms served with wine and cheese sauce

Ingredients

4 chicken breasts

30g butter

2/3 cup sour cream

1/3 cup white wine or water

1 tablespoon wholegrain mustard

1/3 cup cheese grated parmesan

8 small mushrooms, sliced

8 small spinach leaves

Method

Pan fry chicken breasts in butter until golden brown and cooked

Move to one side of the pan

Add cream, white wine or water, wholegrain mustard and grated parmesan cheese

Stir sauce over heat until smooth

Move chicken into the sauce, top with sliced mushrooms and spinach leave

Cover pan and simmer gently for 1-2 minutes or until the mushrooms are lightly cooked

Serves 4
