Chicken Maryland

Fried chicken with deep-fry bananas and pineapple

Ingredients

4 whole chicken legs

2 bananas, halved

pineapple slices, drained

1/2 cup Edmonds plain baking flour, approximately

2 eggs

1/2 cup water

3/4 cup toasted breadcrumbs, approximately

oil for deep-frying

Method

Coat chicken, bananas and pineapple in flour

Beat eggs and water together

Dip chicken, banana and pineapple in egg mixture

Coat with breadcrumbs

Deep-fry chicken in hot oil for 10 minutes or until juices run clear when tested

Do not have oil too hot as chicken will brown but not be cooked through

Drain on absorbent paper

Deep-fry bananas and pineapple until golden

Drain

Serve chicken with bananas and pineapple

Serves 4
