Chicken Curry

Curried Chicken with Rice, easy to make, serves 4

Ingredients

1 tablespoon oil

2 cloves garlic, crushed

1 onion, chopped

1 teaspoon grated root ginger

1 tablespoon curry powder

1 cup chicken stock

4 chicken breasts

Method

Heat oil in a large frying pan

Add garlic, onion and ginger

Cook until onion is clear

Stir in curry powder and cook for 30 seconds

Add stock and chicken

Cover and bring to the boil

Reduce heat and simmer for 30 minutes or until chicken is tender

Serve with rice

Serves 4
