Chicken Croquettes
Chicken minced and dipped in egg, white coated in breadcrumbs and deep fryed
Ingredients
1 cup cooked chicken
1 onion, finely chopped
1 clove garlic, crushed
2 tablespoons butter
2 tablespoons Edmonds plain baking flour
1/2 cup chicken stock
1 teaspoon lemon juice
1 egg, separated
2 tablespoons chopped parsley
salt
black pepper
3/4 cup toasted breadcrumbs, approximately
oil for deep frying
Method
Mince or finely chop chicken
Add onion and garlic
Set aside
Melt butter in a saucepan
Stir in flour and cook until frothy
Gradually add stock, stirring constantly until mixture boils and thickens
Remove from heat
Add lemon juice, egg yolk, parsley, salt and pepper to taste
Stir in chicken mixture
Spread in an 18x20cm tin or dish
Allow to stand until cold
Divide mixture into eight even-sized portions
On a lightly floured board shape each portion into a cylinder
Lightly beat egg white
Dip each croquette in egg white then coat in breadcrumbs
Deep-fry in hot oil for 5 minutes or until golden
Drain on absorbent paper
Serves 3 - 4
