Chicken Creole
Chicken with onions, green pepper, ham, salami, tomatoes and basil
Ingredients
No. 8 chicken
2 onions, chopped
1 green pepper, chopped
1 ham steak, chopped
140 g pot tomato paste
400 g can tomatoes in juice, chopped
1/4 teaspoon sweet basil
50 g salami, chopped
salt
black pepper
Method
Remove neck and giblets from chicken
Place chicken in a large oven proof dish
Add onions, green pepper, ham steak, tomato paste, tomatoes and juice
Cover and cook at 180C for 1 and 1/2 hours or until juices run clear when tested
Add basil and salami
Stir in salt and pepper to taste
Serve with rice
