Chicken Chow Mein

Cooking in a wok an International dish Chicken Chow Mein

Ingredients

2 boneless chicken breasts

2 teaspoons soy sauce

2 teaspoons dry sherry

2 teaspoons Edmonds Fielder's cornflour

1/2 teaspoon grated root ginger

2 tablespoons oil

1 onion, quartered

2 garlic, crushed

1 cup broccoli florets

1/2 cup sliced celery

1 red pepper, sliced

1/2 cup chicken stock

2 teaspoons Edmonds Fielder's cornflour

1 tablespoon soy sauce

Method

Remove skin from chicken

Cut flesh into strips

Combine chicken, first measure of soy sauce, sherry, first measure of cornflour and root ginger

Set aside to marinate for 30 minutes

Heat oil in a wok

Add onion and garlic and cook until onion is clear

Stir in chicken and quickly stir-fry until meat is browned on all sides

Add broccoli, celery and pepper

Stir-fry until vegetables are bright in colour

In a bowl combine stock and second measure of cornflour

Add to wok

Cover and cook until mixture boils and thickens

Sprinkle with second measure of soy sauce

Toss

Serve with crispy noodles

Serves 4
