Cashmere Chutney
A relish made with apples or gooseberries, dates and raisins
Ingredients
1 kg cooking apples, cored, unpeeled and chopped or green gooseberries, topped and tailed
2 cups DYC malt vinegar, approximately
1 clove garlic, crushed
2 cups dates, chopped
2 cups raisins
125 g root ginger, grated
4 cups brown sugar
1 tablespoon salt
1/2 teaspoon cayenne pepper
Method
Put apples and enough vinegar to almost cover fruit into a preserving pan
Cook until fruit is soft
Add garlic, dates, raisins and ginger to the pan
Stir in sugar, salt and cayenne pepper
Boil with frequent stirring for 30 minutes or until chutney is thick and jam-like
Pack into sterilised jars
Makes about 4 x 350ml jars
