Caramel Date Fingers

You can use other dried fruits such as prunes, apricots and raisins, alone or mixed, instead of dates

Ingredients

Filling

1 cup dates, chopped

1 cup water

1 tablespoon brown sugar

1 teaspoon butter

2 teaspoons cocoa

1/4 teaspoon vanilla essence

Base

125 g butter

1/2 cup sugar

1 egg

l & 3/4 cups Edmonds plain baking flour

1 teaspoon Edmonds baking powder

 

Method

Filling

Put dates in a saucepan

Add water, sugar, butter and cocoa

Cook gently over a low heat until a paste-like consistency

Add vanilla and cool

Base

Cream butter and sugar until light and fluffy

Add egg and beat well

Sift flour and baking powder together

Mix into creamed mixture

Divide mixture in half

Press out one piece to fit a 20 cm square tin

Spread with date mixture

On a piece of waxed paper pat or roll out remaining dough to a 20 cm square

Place on top of date filling

Bake at 180°C for 30 minutes or until lightly browned

Cut into fingers
