Beef Meatballs with Rice

Quick and Easy Meal Meat Ball with Rice Risotto

Ingredients

1 onion, finely chopped

375 g mince

2 tablespoons tomato sauce

1 1/2 tablespoons oil

1 packet Savoury Beef Rice Risotto

3/4 cup soft breadcrumbs

2 teaspoons chopped fresh herbs or 1 teaspoon dried herbs

Preparation

Combine onion, mince, breadcrumbs, herbs and tomato sauce

Measure tablespoonsful of mixture and shape into balls about the size of a walnut

Heat the oil in a large frying pan

Add meatballs and cook until browned all over

Shake the pan as meatballs are cooking

Remove from pan

Set aside

Add contents of rice sachet to pan

Cook according to packet directions

Place the meatballs on top of rice when the added water comes to the boil

Cover and simmer over a low heat for 15 minutes

Remove lid and cook for a further 5 minutes or until rice is tender

Serves 4
