Bacon and Egg Pie
Easy to make, a family favorite and it's home made
Ingredients
200 g bacon rashers, rind removed, chopped
450 g flaky pastry
6 eggs
2 cups frozen peas
salt and freshly ground black pepper to taste
1 egg yolk
1 tablespoon water
Preparation
Preheat oven to 220 C
Pan grill the bacon until almost cooked
Leave to cool
Roll out half the pastry and line a sponge roll tin
Place half the bacon over the pastry
Cover with the eggs and peas
Sprinkle the rest of the bacon over the eggs and peas
Season with salt and pepper
Roll out the remaining pastry and cover the filling
Seal the edges
Combine the egg yolk and water and brush over the top of the pastry
Bake in the preheated oven for 15 minutes then lower the temperature to 200 C
And cook for 15 to 25 minutes or until the pastry is golden brown and eggs are firm
