Apricot Stuffed Forequarter
Ingredients
1 kg boned lamb forequarter
1/2 cup chopped dried apricots
3/4 cup soft breadcrumbs
1/2 teaspoon grated root ginger
black pepper
Preparation
Open meat out and place on a flat surface, skin side down.
Combine apricots, breadcrumbs, ginger and pepper to taste.
Spread this over the flesh of the meat then roll up like a sponge roll
Secure with string
Place in a roasting pan or oven bag
Cook at 160°C for 1 1/2 hours or until juices run clear when tested with a skewer
Serve hot or cold
