Crispy Apple Crumble
Sink your spoon into this warm apple crumble. A quick to make crunchy topping over a sweet fruit filling
Ingredients
l/2 cup fresh wholemeal breadcrumbs
l/2 cup toasted muesli
1/4 cup firmly packed brown sugar
3/4 teaspoon ground cinnamon
6 large Granny smith or other cooking apples, peeled, cored, and thinly sliced (about 7 cups)
1/2 cup raisins
4 teaspoons fresh lemon juice
1/3 cup apple cider or water
8 teaspoons unsalted butter, chilled and cut into small pieces
Ready-whipped frozen topping, thawed, and ground cinnamon to decorate
Preparation

Preheat oven to 190°C.
Spray a shallow 1.5 litre ovenproof dish with vegetable oil spray

In a small bowl, mix the bread crumbs, muesli, sugar and cinnamon
In a large bowl combine the apples, raisins and fresh lemon juice

Place half the apple mixture in the prepared dish
Pour the cider over the top
Dot with half the butter
Sprinkle with half the breadcrumb mixture
Spoon the remaining apple mixture over top
Dot with the remaining butter and then the breadcrumb mixture

Bake until breadcrumbs are golden brown and fruit is bubbling, about 30 minutes
To serve, place the crumble, hot or warm, on dessert plates
Top each serving with a dollop of whipped topping and sprinkle with cinnamon for garnish

Make apple cider a staple in your kitchen. Use it instead of chicken stock in pork casserole, or to add moisture and natural sweetness to baked goods.
For a summer treat, substitute 4 large, ripe pears and 1 cup of cherries for the apples in Step 2. Layer ingredients and bake as directed
