Apple Cake
A cake recipe from the Edmonds Cookbook using Granny Smith apples
Ingredients
250 g butter, melted
1 1/4 cups sugar
3 1/4 cups Edmonds plain baking flour
6 teaspoons Edmonds baking powder
4 eggs
2 large Granny Smith apples, sliced
1/2 cup sultanas
2 tablespoons sugar
2 teaspoons cinnamon
1 teaspoon almond essence
Preparation
Put butter, first measure of sugar, flour, baking powder and eggs into a bowl.
Beat with an electric mixer on high speed until smooth.
In a separate bowl combine apple slices, sultanas, second measure of sugar, cinnamon and almond essence.
Spoon half the egg mixture into a greased and lined 22 cm round cake tin.
Arrange half the apple mixture on top.
Spoon remaining egg mixture over apple mixture.
Top with remaining apples, pushing the apples lightly into the mixture.
Bake at 180°C for 1 hour or until cake springs back when lightly touched.
Leave in tin for 10 minutes before turning out onto a cooling rack.
