Almond Rice

Add variety to rice with raisins and almonds

Ingredients

25 g butter

1 large onion, chopped

1 clove garlic, crushed

2 tablespoons raisins

1 1/ 2 cups chicken stock

salt pepper

1 cup rice

1/2 cup sliced almonds, toasted

Preparation

Melt butter in a saucepan.

Add onion and garlic and cook until onion is clear.

Stir in raisins, stock and salt and pepper to taste.

Cover and bring to the boil.

Reduce heat and cook over a low heat for 15-20 minutes or until rice is tender and liquid absorbed.

Stir.

Add most of the almonds, reserving 1 tablespoon for garnish.

Spoon rice into serving dish.

Garnish with reserved almonds.

Serves 4-6.
